Instructions:
Step 1
In this case, I bought the Squipirones clean, we saved ourselves a good job, we left them as is uncut because when we made them they diminish and practically, they would disappear, we cut the scallions into fine julienne.
Step 2
We also cut the pepper into julienne strips, the whole garlic cloves, unpeeled, we simply mash them lightly so that they release the juice when stewing.
Step 3
Poach the onion, at first 5 minutes on high heat and 25 minutes at minimum, season with salt and pepper, after time add the garlic and leave 10 minutes until it has caramelized
Step 4
Then add the pepper and paprika, add salt, mix and add the wine, let it reduce, more or less 15 minutes, it will be time for the squid
Step 5
Mix, cover and leave for 10 minutes
Step 6
In the meantime, we peeled and cut the potatoes to our liking, I diced them, we added them to the stew.
Step 7
Stir the whole thing and leave it on low heat for 20 minutes or until we see that the Squipirones are soft, remove from the heat, let it rest for 10 minutes and all we have to do is sprinkle the chopped parsley.
Step 8
I recommend taking the casserole to the table and then distributing it to the plates.
