Ingredients

  • 300 ml Water
  • 1/2 Package Fresh Yeast
  • 500 g Strength Flour
  • 25 g Sugar
  • 1 Tbsp Onion powder
  • 30 g Crunchy fried onion
  • 2 Teaspoons Chives
  • 50 ml Extra Virgin Olive Oil
  • 2 Tbsp Baking Soda (for boiling)
  • 1 Free range egg (for brushing)
  • Coarse salt (for garnish)
  • Sweet paprika from La Vera (for decoration)
  • Onion powder (for garnish)

Instructions:

    Step 1
  • Put the water and yeast in the glass, and program 1 minute, speed 3 at 37°C. Add the rest of the ingredients and program 5 minutes at herringbone speed.
  • Step 2
  • In a bowl, leave the dough covered with a cloth until it doubles in size (more or less 90 minutes).
  • Step 3
  • After the time has elapsed, we degassed the dough, weighed it, and divided it into balls of approximately 75 g.
  • Step 4
  • To shape them, we make bars, cross the ends and insert one of the tips through the upper hole and the other through the lower one.
  • Step 5
  • Preheat the oven to 180°C, and while boiling with the baking soda, each of the brezels, on both sides, for 15 seconds. We let them dry slightly on a cloth.
  • Step 6
  • In a bowl, mix the salt, paprika and onion powder. Brush with beaten egg when the pretzel dries and sprinkle the mixture. We leave them on a baking sheet.
  • Step 7
  • Bake for about 15 minutes—or until golden brown.
