Instructions:
Step 1
In a bowl we will separate the white from the yolk and reserve the yolk.
Step 2
We will beat the egg white together with a pinch of salt, with the help of an electric whisk, when it is half whipped, we will gradually add the icing sugar without stopping whipping.

We will gradually add the ground almond, stir with the help of a spatula and add the cinnamon and continue to integrate all the ingredients until we have a compact dough.
Step 4
Set aside in the fridge for 30 minutes, covering the bowl with plastic wrap.

Line the oven tray with paper with baking paper and preheat the oven to 180ºC.

Then, we will remove the bowl from the fridge and divide the dough into small portions of approximately 25 g.

We will oil our hands slightly and form balls and we will reserve them in the oven tray, when we have them all, we will crush them slightly.

Whisk the egg yolk and with the help of a brush we will brush our cookies, finally, we will sprinkle with the sliced almonds and bake the cookies for approximately 20 minutes, until they are lightly browned.

When they are done, we will let the cookies warm on the oven plate and when 3-5 minutes have passed, we will let them finish cooling on a rack.
