Ingredients

  • Pork bone broth
  • 1 pack pork ribs
  • 1 spring onion
  • 5 cloves garlic
  • 5 slices of ginger
  • 2 〜2.5water
  • Ramen Sauce (salt)
  • 250 ml water (or Dashi broth)
  • 1 tablespoon Dashi powder (or Dashi broth)
  • 60 g salt
  • 2 tablespoons soy sauce
  • 3 tablespoons white wine (or Sake)
  • 0.5 tablespoon rice vinegar
  • Ramen
  • Ramen noodle
  • 1 leek
  • 3 eggs

Instructions:

  • Cut the meat and vegetables.

  • Place the lid of the pot very carefully, when the pot starts to steam, let it simmer for 30 minutes.

  • 30 minutes later, turn off the heat and leave it until the pressure is naturally released. Then take out the onion and meat.

  • Bone the meat and cut the bones in the middle. Put them in the pot again.

  • Put it on high heat until it is very hot and then lower it to a simmer. Leave it for 30 minutes and remove the fat.

  • Put 250 ml water, 1 tablespoon of Dashi powder, 2 tablespoons of soy sauce, 3 tablespoons of white wine, 0.5 tablespoon of rice vinegar and 60g salt in a bowl.

  • Put the meat in a bag and add 5 tablespoons of the sauce. Keep it in the refrigerator for 30 minutes ~ 1 hour.

  • Cut the meat and leek. Then put the leek in a bowl of water. Leave it for a few minutes to moisturize and then take it out.

  • Boil the eggs and cut them in half. You'll be ready to make Ramen.

  • Boil the Ramen noodle. While the noodle is boiling, prepare the Ramen soup. Serve the sauce and broth in a bowl. (Adjust to the desired depth)
