Fill a pot with plenty of water and bring it to a boil. Add a little splash of vinegar and add the potatoes. We add the vinegar to make the potato easier to peel later. A little trick that a friend gave me and that really works. Let them cook for about 25 minutes. Until you can stick a knife in and it comes out easily, at which point they'll be cooked.

While they are cooking, pour water into another smaller pot and put the eggs. Add a good handful of salt (a trick also to make them easier to peel) and bring to a boil. When the water starts to boil, we count 10 minutes. At which point we will drain the eggs and put them in cold water, before peeling them.

When we have the eggs and potatoes cooked and already cold, peel them and cut them into large pieces. You can cut them into slices or into tacos. As you prefer. We do the same with tomatoes. You can peel them if you prefer but I like the shell. Then we put all these ingredients in a salad bowl, the lettuce leaves, which we cut with our hands. Experts say that doing so does not lose its vitamins. Add the whole stalks or sardines if they are small or in half if they are very large and the Burgos cheese cut into pieces. We finished dressing by first adding a pinch of salt, then a splash of oil and finally with a generous drizzle of olive oil.
