1 cup water
1/2 cup unsalted butter
1 cup all-purpose flour
1/4 tsp salt
3 large eggs
Vegetable oil (for frying)
1/2 cup sugar
1 tsp ground cinnamon
200g dark chocolate
1 cup heavy cream
1/2 tsp vanilla extract

Instructions:
Step 1
In a saucepan, bring water and butter to a boil. Stir in the flour and salt until a smooth dough forms. Remove from heat.
Step 2
Beat in the eggs one at a time until the mixture is smooth and glossy.
Step 3
Heat vegetable oil in a deep pan. Pipe the churro dough through a star tip into the hot oil. Fry until golden brown, then drain on paper towels.
Step 4
Mix sugar and cinnamon in a shallow dish. Roll the churros in this mixture while still warm.
Step 5
For the chocolate sauce, heat the cream until it simmers. Pour over chopped chocolate and stir until smooth. Add vanilla extract.
Step 6
