Recipe of Creamy oat flour.

Vida Recetas Editorial

Mantecados are a classic of Spanish Christmas pastry, but this version with oat flour makes them a healthier option, suitable for those looking for gluten-free alternatives (if you use certified oats). Originating from Andalusia, these sweets are traditionally made with lard, but here we reinvent them with extra virgin olive oil, achieving a tender texture and delicate flavor.

Why will you love this recipe?

It is perfect for surprising your family at snack time or for giving as a Christmas gift. The combination of whole oat flour and almond flour provides fiber, protein, and healthy fats, while Ceylon cinnamon gives it a warm and comforting aroma. Plus, they are very easy to make, ideal even for beginners.

You can enjoy them alone, with a glass of cold milk, or with coffee. They also admit variations: add lemon zest, chocolate chips, or chopped nuts to customize them. Go ahead and make them to celebrate with a traditional but renewed sweet!

Ingredients

Directions

  1. 1

We will start by toasting the flours, throw the two flours into a large pan and heat them to medium temperature, turning them from time to time until they take on a slight yellow color and smell like popcorn.

  2. 2

Pour the flours into a large bowl or on the oven tray, spread well and let them cool.

  3. 3

Preheat the oven to 180º C.

  4. 4

In a large bowl, put the flours and mix with the icing sugar, cinnamon and oil.

  5. 5

Once everything is well kneaded, better with the hand, we extend it with a rolling pin and leave it a thickness of about two centimeters and cut with a pasta cutter or a glass. We can also make a roll with the dough and cut them into pieces. If necessary because the dough is a little soft, we can put it in the fridge for an hour wrapped in plastic wrap.

  6. 6

Place them on the baking tray, on top of parchment paper and bake for about 10-12 minutes.

  7. 7

We let them cool down and we don't touch them for a while because they'll break.

  8. 8

Sprinkle with icing sugar and keep them in a metal box for better preservation.

  9. 9

    Enjoy!!!!!!!!!!!!!!!!!!!!!
