  • 4 small Italian zucchini.
  • 2 eggplants.
  • 2 red bell peppers.
  • 2 green peppers.
  • 4 tomatoes without skin or seeds.
  • 2 onions cut into cubes.
  • 8 tablespoons of olive oil.
  • Salt and pepper to taste.
  • 3 cloves of garlic, finely chopped.
  • A bunch of herbs: parsley, rosemary, thyme and tarragon (just a small branch of each).

  • Cut the zucchini and eggplants into cubes.
