Ingredients

  • 1 sheet of puff pastry
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 2 ripe tomatoes, thinly sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh goat cheese (optional) for garnish
  • Fresh basil for garnish

Instructions:

    Step 1
  • Preheat the oven to 180°C (350°F).
  • Step 2
  • Roll out the puff pastry sheet on a baking tray lined with parchment paper and fold the edges inwards to form a border.

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for a few minutes until they become golden.

  • Add the diced eggplant, zucchini, and bell peppers. Cook the vegetables until they become tender but not overly soft, stirring occasionally. About 10-12 minutes.

  • Add the tomato slices and oregano to the vegetables. Continue to cook for another 2-3 minutes. Season with salt and pepper.

  • Transfer the vegetable mixture onto the puff pastry base and spread it evenly.
  • Step 7
  • Bake the tart for approximately 25-30 minutes or until the puff pastry is golden and crispy, and the vegetables are soft.
  • Step 8
  • Allow it to cool slightly before cutting and serving. If desired, garnish with slices of fresh goat cheese and basil leaves.
  • Step 9
  • Serve your ratatouille tart warm or at room temperature. Enjoy!
