To share on a weekend afternoon I'm going to teach you how to prepare some pork schnitzel sandwiches a la pauvre.

You can accompany it with a salad of chopped coriander, onion, tomatoes and carrot zest, add pink sauce.

Ingredients

  • 6 thin pork loin scallops
  • 2 cloves garlic
  • 1 tbsp. Chopped parsley
  • 1 tbsp. Chopped oregano
  • 1 tsp, salt
  • 1/8 tsp. Pepper powder
  • 1/2 cup all-purpose flour
  • 1 egg beaten with 1 tbsp. milk
  • 1 and 1/2 cups of Panko or regular breadcrumbs
  • 5 big potatoes
  • 2 onions cut in feather
  • 1 fried egg per person
  • 1 marraquette per person (See recipe).

Instructions:

    Step 1
  • Place the pork scallops one by one between plastic film and hit them on both sides with a kitchen hammer.
  • Step 2
  • Mix the garlic, parsley, oregano, salt, pepper in a bowl and season the scallops on both sides.
  • Step 3
  • Coat the scallops in flour mixed with a little salt, egg and breadcrumbs.
  • Step 4
  • Let it rest in the refrigerator for 1 hour so that the breadcrumbs adhere well to the scallops.
  • Step 5
  • Fry the scallops and leave them on absorbent paper towels.
  • Step 6
  • Cut the potatoes into sticks, with or without skin.
  • Step 7
  • Fry the potatoes until golden brown.
  • Step 8
  • Heat a pan and brown or caramelise the onion to the point you want. Fry the eggs to your liking.
  • Step 9
  • Cut the marraquettes in half lengthwise.
  • Step 10
  • On the bottom cover, place the fried pork schnitzels, caramelized onion and on top of the fried egg.
  • Step 11
  • Serve the sandwich with French fries.
