Recipe of Japanese-style rice noodles.

Discover how to prepare delicious Japanese-style rice noodles with shrimp and vegetables, an easy and quick recipe that will transport you to Asian cuisine. This dish combines the softness of rice noodles with the umami flavor of soy sauce and the creamy touch of peanut butter, creating a balanced and flavorful gastronomic experience. It is ideal for a light weekday meal or for surprising your guests with an exotic dish without complications.

Why will you love this recipe?

The key lies in simplicity and flavor harmony. The noodles are hydrated instead of boiled, maintaining their perfect texture, while the sautéed vegetables add freshness and the shrimp, a marine touch. The soy sauce and ginger powder give it that unmistakable Japanese character, and the sesame seeds add a delicious crunch.

This recipe is perfect for those looking for a healthy, gluten-free (if using gluten-free soy sauce) and protein-packed option. You can customize it by adding your favorite vegetables or a squeeze of lemon for a citrusy touch. Go ahead and try it to enjoy a culinary trip to Japan from your kitchen!

Ingredients

Directions

  1. 1

Boil water for the noodles (they are not cooked, they are only allowed to hydrate for the minutes specified on the bag).

  2. 2

Cut the onion into thin strips just like the zucchini and put them with a little bit of EVOO in a pan over medium heat.

  3. 3

When the vegetables start to brown, add the peeled prawns (I used frozen) and turn up the heat.

  4. 4

If the water is already boiling, turn off the heat and add the noodles to hydrate.

  5. 5

Add sesame seeds to the pan with the vegetables and prawns and lower the heat.

  6. 6

Meanwhile, we prepare the soy sauce, a little bit of EVOO and the peanut butter (on a personal level I add a splash of lemon but it's to taste), stir well until it is integrated and set aside.

  7. 7

When the noodles are already hydrated, it is important to drain and rinse them before passing them to the pan with the vegetables and prawns.

  8. 8

Stir everything, add the sauce we had reserved and raise the heat for 2 minutes without stopping moving it.

  9. 9

Done, serve and eat on the spot!
