  • 2 cups Arborio rice
  • 1/2 ounce dried Porcini mushrooms
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable broth, hot
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish

  • Soak the dried Porcini mushrooms in hot water for 15 minutes. Drain and chop them.

  • In a pan, sauté the onion and garlic in butter until translucent. Add Arborio rice and cook until lightly toasted.

  • Pour in the white wine and cook until evaporated. Begin adding hot broth, one ladle at a time, stirring until absorbed.

  • After 15 minutes, add the chopped Porcini mushrooms to the risotto.

  • Continue adding broth and stirring until the rice is creamy and cooked al dente.

  • Remove from heat, stir in Parmesan, and season with salt and pepper.
