  • Salt and pepper to taste

  • Heat the olive oil and butter in a large pot over medium heat.

  • Add the chopped onion and minced garlic. Sauté until they become translucent, about 5 minutes.

  • Stir in the diced celeriac and potatoes. Cook for another 5 minutes, allowing the vegetables to slightly soften.

  • Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, you can use a regular blender in batches.
