  • 180 gr. granulated tapioca
  • 750 ml. milk at room temperature
  • 100 gr. grated coconut
  • 20 gr. butter or margarine
  • 390 gr. condensed milk
  • 4 eggs (each egg weighs about 63 g with shell)
  • Caramel we need:
  • 270 gr. sugar
  • 120 ml. warm water
  • 1 tsp coconut essence (optional).

Instructions:

    Step 1
  • We prepare all the ingredients.
  • Step 2
  • Mold to be used: round, chimney 22 cm. diameter x 9 cm high.
  • Step 3
  • We are going to make the caramel: put the sugar in a saucepan, let it melt completely and take on a dark color, add the water twice and mix very well. Once all the water has been incorporated, let it cook for a couple of minutes and remove from the heat. Put in the mold, spread very well everywhere, set aside.
  • Step 4
  • In a bowl we put the tapioca, the grated coconut, the coconut essence and of the total milk we have we are going to use 625 ml. Mix very well, cover with transparent film and we will leave it moisturizing 30'.

  • After the time has passed, mix the tapioca very well. In a blender bowl, put the condensed milk, eggs, butter or margarine, and beat very well. Add the tapioca, the rest of the milk set aside and continue whisking.
  • Step 6
  • Put our mixture in the prepared mold, add it carefully so as not to lift the caramel, put it in the oven where it will be ready to make a water bath. When they see that it browns a lot on the surface and it is not yet well cooked, we will cover it with aluminum foil until it is finished cooking.
