  • 1 cup raisins
  • 1 cup currants
  • 1 cup sultanas
  • 1/2 cup chopped candied peel
  • 1/2 cup chopped almonds
  • 1 cup breadcrumbs
  • 1 cup brown sugar
  • 1/2 cup self-raising flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 1/2 cup suet (vegetable or beef)
  • 2 large eggs
  • 2 tbsp brandy
  • 2 tbsp milk

Instructions:

    Step 1
  • In a large mixing bowl, combine all the dried fruits, candied peel, chopped almonds, breadcrumbs, brown sugar, self-raising flour, and spices.
  • Step 2
  • Add the lemon and orange zest and juice to the mixture, followed by the suet.
  • Step 3
  • In a separate bowl, beat the eggs and then stir in the brandy and milk.
  • Step 4
  • Pour the egg mixture into the dry ingredients and mix thoroughly until well combined. The mixture should have a dropping consistency.
  • Step 5
  • Grease a 2-pint pudding basin and pack the mixture into it, leaving a little space for the pudding to rise.

  • Cover the pudding with a double layer of greaseproof paper and a single layer of foil, securing it with string.
  • Step 7
  • Place the pudding basin in a large saucepan with enough water to come halfway up the sides of the basin. Cover with a lid and steam for 6 hours, topping up the water as needed.

  • After steaming, allow the pudding to cool and then store it in a cool, dark place for at least a few weeks (or even months) to let the flavors mature.
  • Step 9
  • On Christmas Day, reheat the pudding by steaming for an additional 2 hours. Serve it with a generous dollop of brandy butter or custard.
