Ingredients

  • 500g ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 can (400g) diced tomatoes
  • 1/2 cup beef or vegetable broth
  • 2 tbsp tomato paste
  • 1/4 cup olive oil
  • 4 eggs
  • Fresh cilantro for garnish

Instructions:

    Step 1
  • In a bowl, mix ground meat, onion, garlic, parsley, cilantro, cumin, coriander, paprika, salt, and pepper.

  • Form the mixture into small meatballs (kefta) and set aside.

  • In a tagine or deep skillet, heat olive oil over medium heat. Add meatballs and brown on all sides.

  • Add diced tomatoes, tomato paste, and broth. Simmer for 20-25 minutes.
  • Step 5
  • Create small wells in the sauce and crack eggs into them. Cover and cook until eggs are set.
  • Step 6
