How to make an authentic Spanish omelette easily

The Spanish tortilla is a traditional dish that is part of Spain's cuisine. Its preparation is simple and requires few ingredients, making it an excellent option for any occasion. Below are the necessary steps to make an authentic Spanish tortilla at home.

Necessary Ingredients

To enjoy a delicious Spanish tortilla, you will need the following ingredients:

  • 4 large eggs
  • 4 medium potatoes
  • 1 onion (optional)
  • Salt to taste
  • Olive oil for frying

Preparing the Ingredients

Step 1: Peel and Cut the Potatoes

Start by peeling the potatoes and then cut them into thin slices. You can also choose to cut them into cubes, depending on your preference. The key is to ensure that the pieces are of uniform size for even cooking.

Step 2: Optional, Prepare the Onion

If you decide to include onion in your tortilla, peel it and chop it into small pieces. The onion adds an extra flavor that many consider essential in the Spanish tortilla, although its use is completely optional.

Cooking the Potatoes and Onion

Step 3: Fry the Potatoes and Onion

In a large frying pan, heat about half a centimeter of olive oil over medium heat. Once hot, add the potatoes (and the onion if you are using it). Cook the potatoes for about 15-20 minutes, or until they are tender and lightly golden, stirring occasionally to prevent sticking.

Step 4: Drain Excess Oil

Once the potatoes are ready, remove them from the heat and place them in a colander to drain the excess oil. Let them rest for a few minutes.

Beating the Eggs

Step 5: Beat the Eggs

In a large bowl, crack the four eggs and beat them well. Add a little salt to taste. The amount of salt will depend on your preferences, but remember that you can adjust the flavor at the end.

Mixing and Cooking the Tortilla

Step 6: Mix Ingredients

Once the potatoes have cooled a bit, add them to the bowl with the beaten eggs. Gently mix so that the potatoes are well coated with the egg. It is important not to break the potatoes too much while mixing.

Step 7: Cook the Tortilla

In the same frying pan where you cooked the potatoes, remove the excess oil, leaving just a thin layer at the bottom. Reheat the pan over medium heat. Pour the egg and potato mixture into the pan and cook for about 5-7 minutes, or until the edges start to set.

Step 8: Flip the Tortilla

To flip the tortilla, place a large plate over the pan and carefully turn the tortilla onto the plate. Then, slide it back into the pan to cook the other side for another 5 minutes. This step may require a bit of practice, so make sure to use a plate that won't slip.

Serve and Enjoy

The Spanish tortilla can be served hot, at room temperature, or cold. You can cut it into triangles or squares and enjoy it as a tapa, in a main meal, or as a snack.

Now that you know the basic recipe, you can experiment with other ingredients or variations of this Spanish classic.
