Add the reserved tickets and program 8 minutes/100 degrees/speed 4. Remove the dough to a pastry bag or a bowl moistened with water and let it cool for at least 2 hours. I leave it overnight in the fridge.
Step 7
Put the breadcrumbs on a tall platter. Proceed to form the croquettes in the way that is most practical for you, with two spoons, with a pastry bag, croquetter, etc... First coat the croquettes in breadcrumbs, then pass them through the egg and finally again through the breadcrumbs. Fry in plenty of hot oil and let it drain on absorbent paper and let's eat!!!!
Step 8
Note: If you use dried mushrooms, you will need to moisturize them at least 30 minutes before cooking the croquettes. The amount you should use of these mushrooms is approximately 30 grams. You can also use frozen mushrooms.
