Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 1 tablespoon vegetable oil
  • Filling:
  • 2 cups mashed potatoes
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped onions
  • Salt and pepper to taste
  • Toppings:
  • 1/2 cup melted butter
  • 1/2 cup sour cream
  • Chopped chives for garnish

Instructions:

    Step 1
  • In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the warm water and vegetable oil. Mix until a dough forms.
  • Step 2
  • Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
  • Step 3
  • In a separate mixing bowl, combine the mashed potatoes, grated cheese, chopped onions, salt, and pepper. Mix thoroughly.
  • Step 4
  • Roll out the dough on a floured surface until it reaches a thickness of about 1/8 inch. Use a round cookie cutter or glass to cut out circles from the dough.
  • Step 5
  • Place a spoonful of the potato filling onto each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  • Step 6
  • Bring a large pot of salted water to a boil. Carefully add the pierogi to the boiling water and cook for approximately 3-4 minutes, or until they float to the surface. Remove them with a slotted spoon and transfer to a serving dish.
  • Step 7
  • Serve the pierogi while hot, drizzled generously with melted butter and a dollop of sour cream. Sprinkle chopped chives on top for a burst of flavor and color. Enjoy your homemade Pierogi!
