Ingredients

  • 2 1/2 cups cassava flour
  • 4 cups shredded mozzarella cheese
  • 1 tsp. baking powder
  • 4 oz. butter, at room temperature
  • A pinch of salt
  • 2 eggs

Instructions:

    Step 1
  • Pre-heat the oven to 500-F
  • Step 2
  • Combine the cassava flour, cheese, baking powder and salt in the food processor, mix well.
  • Step 3
  • Add the butter and eggs and mix until small balls of dough start to form.
  • Step 4
  • Take the dough out of the processor and form a ball. (The dough can be stored for up to one day in the fridge).
  • Step 5
  • Shape the breads into small balls and place them in a greased tin.
  • Step 6
  • Bake for about 7 mins. Or until the breads are golden brown. Serve the yuca breads right away.
