Recipe of Almond Polvorones
Polvorones are traditional Spanish cookies, especially popular at Christmas. This almond polvorones recipe lets you make these melt-in-your-mouth delights at home, with an intense toasted almond flavor and a hint of cinnamon.
Why do these polvorones work?
- Unique texture: the combination of lard and toasted flour creates that characteristic sandy, crumbly consistency.
- Authentic flavor: chopped almonds, with some small pieces, provide an unmistakable aroma and taste.
- Easy to make: with simple ingredients and clear steps, they are perfect for home baking, even for selling.
Variations and tips
You can substitute almonds with hazelnuts or walnuts, or add a touch of lemon zest. For a lighter version, use vegetable margarine instead of lard. The resting time in the fridge is key to keeping their shape when baking.
