Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a small bowl, mix together the granulated sugar, chopped nuts, and ground cinnamon. Set this mixture aside.

Roll out the puff pastry dough into a rectangle on a lightly floured surface. Cut it into strips about 1 inch wide and 8 inches long.

Take each strip of pastry dough and roll it in the sugar-nut-cinnamon mixture, making sure it's well coated.

Carefully wrap each coated strip around a cream horn mold, starting from the pointed end and spiraling upwards. Ensure the dough overlaps slightly with each turn to prevent unraveling.

Place the prepared pastry horns on the baking sheet and bake them in the preheated oven for about 15-20 minutes, or until they are golden brown and crispy.

While the pastry horns are baking, prepare the pastry cream. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Once the pastry horns are done baking, remove them from the oven and let them cool for a few minutes. Carefully slide the horns off the molds while they are still warm.

Fill each pastry horn with the whipped cream using a pastry bag or a small spoon.

Optionally, dust the tops of the cream horns with a little powdered sugar for an extra touch of sweetness.
