Instructions:
Step 1
We activate the yeast by mixing it with sugar and warm milk. Let it work for about 10 minutes until its volume increases. In a large bowl, put the flour. We make a hole in the center and add the ground pumpkin with the fermented yeast.
Step 2
Mix well until you get a chewy dough. Cover with plastic wrap and let it rest for about two hours until it has doubled in volume.
Step 3
Prepare the syrup by making a caramel with brown sugar, then add a liter of hot water and the orange peels and let it cook until the caramel that forms with the sugar melts. Finally, add a large spoonful of cornstarch dissolved in water and let it cook for a minute until it becomes a semi-thick syrup. Remove from the heat and set aside. We form the picarones by wetting our fingers. We take out a portion of dough, make a ball, crush it.
Step 4
We make a hole in the center and fry in hot oil, forming the hole with a thick skewer stick so that it doesn't close. Remove and let it drain on absorbent paper.
Step 5
When they are ready, place five pickles on a low plate. We dropped three big ladles of the syrup and... Let's enjoy these delicious pick-ups!
