  • 1 1/2 pounds (680g) beef fillet
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup Dijon mustard
  • 1 pound (450g) cremini mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 4 slices of prosciutto
  • 1 sheet of puff pastry (about 14x16 inches)
  • 1 egg, beaten (for egg wash)

Instructions:

    Step 1
  • Season the beef fillet generously with salt and pepper. Heat olive oil in a skillet over high heat. Sear the beef on all sides until browned. Remove from heat and let it cool.
  • Step 2
  • Brush the seared beef fillet with a thin layer of Dijon mustard, then set it aside.
  • Step 3
  • In the same skillet, add more olive oil if needed. Sauté the chopped mushrooms, garlic, and shallots until they release their moisture and become tender. Season with salt and pepper, and stir in the chopped parsley. Allow the mushroom mixture to cool completely.

  • Lay a sheet of plastic wrap on a clean surface and place the slices of prosciutto on it, slightly overlapping to form a rectangle. Spread the cooled mushroom mixture evenly over the prosciutto.

  • Place the seared beef fillet on top of the mushroom mixture. Carefully wrap the prosciutto and mushroom mixture around the beef, using the plastic wrap to help shape it into a tight cylinder. Twist the ends of the plastic wrap to seal, then refrigerate for about 30 minutes to firm up.

  • Preheat your oven to 425°F (220°C). Roll out the puff pastry sheet on a lightly floured surface to a size large enough to completely wrap the beef fillet.

  • Remove the plastic wrap from the beef fillet and place it in the center of the puff pastry. Fold the pastry over the beef, sealing the edges by pressing them together.
