  • 6 oz of cooked chicken breast (or your choice of protein).
  • 2oz (56g) whole wheat soba noodles
  • 1 cup Broccolini.
  • 2/3 cup of minced Cremini mushrooms.
  • 1/2 tablespoon garlic.
  • 1/4 cup of low-sodium soy sauce.
  • 1 tablespoon sesame oil.
  • 1 tablespoon of ginger (pasta or fresh).
  • 1 1/2 tablespoon of raw honey.

Instructions:

    Step 1
  • Cook the soba noodles according to the instructions given.
  • Step 2
  • Mix all the ingredients for the sauce and set it aside.
  • Step 3
  • Put a pan on medium high heat and spray with a little oil. Once hot, toss in the garlic and mushrooms and cook for about 3 to 5 minutes, until the sautéed mushrooms appear on all sides. Then toss in the broccolini and brown for another 5 to 6 minutes. Be careful not to burn the broccoli, you want it to be a little firm and crunchy.

  • Allow the chicken to cool and then mix the noodles with the vegetables and pasta. Add your choice of protein (i.e. chicken, lean side dish, etc.) and half of the sauce.
