Ingredients

  • 15 gr. of fresh yeast.
  • 15 ml of honey.
  • 350 ml of water.
  • 100 gr. of strength flour.
  • 200 gr. of uncooked cornmeal.
  • 200 gr. of wholemeal flour.
  • Salt.

Instructions:

    Step 1
  • In a small bowl, add the honey, yeast and 100 ml of warm water and stir.
  • Step 2
  • In another bowl, mix the flours leaving a hole in the center where we will pour the first mixture.
  • Step 3
  • Cover and let it rest for about 20 minutes. Pour the salt and the rest of the water over the flour, adding it little by little.
  • Step 4
  • We start kneading with our hands greased in oil until we get the dough to have a smooth and lump-free consistency.
  • Step 5
  • Cover and let it sit until it doubles in size. Sprinkle some flour in a mold and place the dough, pressing the folds above to create surface tension.
  • Step 6
  • Place in the mold, cover and let it rest for another 30 minutes. Preheat the oven to 250° and bake for about 10 minutes, lower the temperature to 180° and wait another 40-45 minutes.
  • Step 7
  • We unmold and wait for it to cool down.
