Ingredients

  • 2 kg potato
  • 2 tbsp. De Manteca (from the chicharrones)
  • c/n Salt
  • c/n Chicharrones
  • 1 L. Frying oil

Instructions:

    Step 1
  • With the potatoes already peeled, 1 kilo is brought to a boil without salt and then pureed. Meanwhile, the remaining kilo is grated on the finer side of the grater.
  • Step 2
  • With the help of a kitchen towel, we squeeze out the raw potato, removing as much liquid as possible.
  • Step 3
  • Mix the puree with the raw potato, two tablespoons of butter and c/n of salt.
  • Step 4
  • With the mixture ready, we shape the cornflowers by adding cracklings in the middle.
  • Step 5
  • Fry them in plenty of oil until golden brown.
  • Step 6
  • Serve warm.
