    Toast the flour in a pan (without oil), crushing any lumps, until it has a light toasted color. Sift it.

    Crush the almonds, without leaving them too thin, better if you find pieces.

    Mix the toasted flour, almonds, cinnamon..., icing sugar and lard. Knead with your hands and make a ball, crush it with the rolling pin, between two baking papers...

    Leave the one about 2 cm thick.

    Cut the polvorones with a pasta cutter, put them in the tray lined with baking paper...

    Sprinkle the sesame seeds on top and set aside for at least two hours in the fridge.

    After two hours, heat the oven to 200ºC and cook for 8 to 12 minutes. The time is indicative, the polvorones have to take on a slight color and remove them...
