  • 1 onion, diced
  • 1 glass of white wine
  • yellow food coloring

  • 1 liter 300 ml of chicken or vegetable broth.

Instructions:

    Step 1
  • Add 1/3 of the butter to a pot, let it melt and then add the chopped onion and let it sauté, until it gets a golden color.
  • Step 2
  • Pour in the chicken and let it sear on both sides. Add the rice and stir so that it crystallizes. Add a pinch of salt, food coloring and pepper. Stir and add the white wine.
  • Step 3
  • Now add, little by little, the contents of the broth. The rice will absorb the water, so you must add it as it dries, and try to stir at all times, this process will take about 20 to 25 minutes.
  • Step 4
  • Remove from the heat and add the rest of the butter, stirring until it melts. Add the cheese and mix again so that it blends with the risotto.
