Preheat your oven to 200°C (392°F) and place a baking sheet inside to preheat.

Grease the ramekins with butter and dust them with cocoa powder. This ensures the fondants easily release after baking.

In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can use a microwave or a double boiler for this. Stir until smooth and set aside to cool slightly.

In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.

Gently fold the melted chocolate mixture into the egg mixture.

Sift the all-purpose flour over the chocolate mixture and gently fold it in until no streaks of flour remain.

Divide the batter evenly among the prepared ramekins.

Place the ramekins on the preheated baking sheet and bake for 12-14 minutes. The fondants should have a set exterior but a slightly wobbly center.

To serve, run a knife around the edge of each fondant to loosen it, then invert it onto a plate.
