Recipe of Colegial

Vida Recetas Editorial

Colegial is a traditional Chilean dessert that evokes childhood flavors and family gatherings. This recipe, also known as bread pudding, is perfect for those looking for an economical, easy-to-make dessert that uses basic ingredients like stale bread, milk, eggs, and sugar. Its creamy texture and vanilla-cinnamon flavor, topped with golden caramel, make it a favorite for children's parties or get-togethers.

Making colegial is simple and requires no advanced cooking skills. First, soak the bread in milk with vanilla and cinnamon, then mix with eggs and sugar, and finally blend until smooth (optional). The caramel is made by melting sugar over low heat, and it is poured into the mold before adding the mixture. Bake at 180°C for about an hour, either in a water bath or directly, until set.

This dessert allows variations: you can add raisins, nuts, or even a splash of liqueur. Serve cold or warm, decorated with liquid caramel, chopped peanuts, or colorful candies. Ideal for gluten-free diets if using gluten-free bread, and for those seeking a comforting and delicious treat.

Directions

  1. 1

First we must cut the bread and add the milk so that it soaks well, also add the vanilla essence and a little bit of ground cinnamon.

  2. 2

When we see that the bread has absorbed the milk, add the sugar, the eggs and mix until everything is combined.

  3. 3

Then I passed this mixture through a blender so that the pieces of bread would not be felt (because my mom doesn't like them, but it's to everyone's liking)

  4. 4

For the caramel (which I didn't think would work out well for me) I just added the sugar in a pan over low heat and stirred from time to time with a wooden spoon.

  5. 5

Now all that remains is to add the caramel to the dish where it will be cooked trying to do it quickly because it cools down later.

  6. 6

Then add the bread mixture and bake at 180° for about an hour (cooking can be in a double boiler or direct, I did it in a double boiler).

  7. 7

And done! Let's enjoy this delicacy.
