Ingredients

  • 2 large eggplants
  • Olive oil
  • Sal
  • Pimienta
  • Coriander in chiffonade
  • 2 Tbsp of lime juice

Instructions:

    Step 1
  • Puncture the skin of the eggplants with the tip of a sharp knife, without puncturing the pulp, and place them in the oven tray, preheated to 180°C, 50 minutes or until tender.
  • Step 2
  • When they are ready, remove from the oven and let them cool until you can handle them. Cut them in half and remove the pulp with a spoon. Have a bowl to place the pulp and then grind it well with a fork.
  • Step 3
  • Once the eggplant pasta is ready, continue with the seasoning, add the olive oil, lime or lemon juice, season and finally add the finely chopped coriander.
  • Step 4
  • Let it cool in the refrigerator before serving.
  • Step 5
  • To accompany it, we recommend making some toast with garlic oil, and that's it! Enjoy!
