Chilean charquican is a traditional recipe from Chile, let's see how to prepare charquican, it is a vegetable puree that used to be accompanied by dried meat; but nowadays it is cooked with ground or minced meat. It's one of our favorite recipes because first, it's easy and quick to prepare and second, it's a great alternative to learning to eat vegetables that are so good for our body.

Ingredients

  • 1/2 cup of green beans
  • 500 grams of potatoes
  • 300 g of minced pumpkin, skinless
  • 300 g ground beef, chicken, turkey or pork
  • 1/2 cup of peas
  • 1/2 cup of corn or corn
  • 1 clove of garlic
  • 1 pack of spinach
  • 1 onion
  • 1 carrot
  • Full dressing
  • salt
  • Chili pepper or paprika
  • oil
  • 1 fried egg
  • OPTIONAL: concentrated broth

Instructions:

    Step 1
  • In a pot, place potatoes, squash, carrots, squash, corn, green beans, peas and spinach. Cover with water, if you wish you can add dissolved beef, chicken or vegetable broth, and leave until cooked for about 20 to 25 minutes on medium heat.
  • Step 2
  • Place oil in a pan, add diced onion, let it fry for 3 minutes and then add the ground beef, the whole dressing, salt to taste and paprika
  • Step 3
  • Extract the broth from the pot where you cooked the vegetables and then grind the vegetables. Now pour in the sauce and stir them.
  • Step 4
  • Finally, add a fried egg to each plate and serve with a tomato and garlic salad.
