  • 1 carrot, chopped
  • 1 leek, chopped
  • 1 bay leaf
  • 1 sprig of thyme
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions:

    Step 1
  • In a large pot, melt the butter over medium heat. Add the chopped onion, garlic, celery, carrot, and leek. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.
