Ingredients

  • 4 chicken breasts (or substitute with tofu for a vegetarian version)
  • 2 cups walnuts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth (or vegetable broth for the vegetarian version)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground fenugreek
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions:

    Step 1
  • In a dry skillet, toast the walnuts over medium heat until they become fragrant and lightly browned. Be careful not to burn them. Remove from the heat and let them cool.
  • Step 2
  • Once cooled, place the toasted walnuts in a food processor and blend until they turn into a fine walnut paste.
  • Step 3
  • In a large saucepan, sauté the finely chopped onion and minced garlic until they become translucent.
  • Step 4
  • Add the walnut paste, chicken or vegetable broth, ground coriander, fenugreek, paprika, and cayenne pepper to the saucepan. Stir well and let it simmer over low heat for about 15-20 minutes, stirring occasionally. The sauce should thicken and become creamy.

  • While the sauce is simmering, season the chicken breasts with salt and pepper. Grill or cook the chicken until it's fully cooked and has a nice sear. Slice the chicken into thin strips.

  • To serve, place the sliced chicken on a plate, and generously drizzle the creamy walnut sauce (Satsivi) over it.
