With the potatoes already peeled, 1 kilo is brought to a boil without salt and then pureed. Meanwhile, the remaining kilo is grated on the finer side of the grater.

With the help of a kitchen towel, we squeeze out the raw potato, removing as much liquid as possible.

Mix the puree with the raw potato, two tablespoons of butter and c/n of salt.
Step 4
With the mixture ready, we shape the cornflowers by adding cracklings in the middle.
