    Clean the meat by removing as much connective tissue as possible, cut into medallions of approximately 3 fingers.

    Chop the onion, paprika and carrots into large pieces, peel the garlic cloves.

    Heat oil in our pot and seal the meat well on all sides. Once this is done, add the vegetables and sauté together with the choclillo. Season to taste (in my case salt, pepper, cumin, paprika and a little rocoto powder to make it spicy).

    Once the vegetables are well caramelized, add a cup of wine and 3 cups of water or until the ingredients are covered. Cover the pot and simmer for 30/40 minutes (I used a pressure cooker).

    Once the time has passed, remove the meat and shred. With a fork, grind the vegetables and add the tomato sauce to the broth, put the meat back in to rehydrate and absorb flavors.

    Toast the bread on both sides so that it retains the juices of the meat and start assembling our sandwich.

    Obviously it can be with whatever we like best, in my case it has arugula, red onion, tomato, green chili pepper and not spicy mayo.

    And let's enjoy!! Whether it's Italian, Chacarero, Luco or whatever you like, always accompanied by a little black wena.
