Instructions:

    Step 1
  • In a saucepan, heat the chicken or vegetable broth over medium heat until it simmers. Reduce the heat to low to keep it warm.

  • In another large saucepan, sauté the finely chopped onion and minced garlic in a bit of olive oil until they become translucent.

  • Add the Arborio rice to the onion and garlic mixture and stir for a couple of minutes until the rice becomes translucent at the edges.

  • Remove the cooked rice from the heat and stir in the grated Parmesan cheese and chopped fresh parsley. Season with salt and black pepper to taste.

  • Allow the rice mixture to cool completely. Then, take a small portion of the rice mixture and flatten it in your hand. Place a small cube of mozzarella cheese in the center and encase it with the rice, forming a small oval-shaped croquette.

  • Roll each supplì in flour, dip it in beaten eggs, and then coat it with breadcrumbs, ensuring they are evenly coated.
