Ingredients

  • Basis:
  • 4 medium potatoes
  • 1 tbsp milk
  • ¼ cup of grated Parmesan cheese
  • 1 tbsp chopped scallions
  • ½ cup of minced bacon
  • 1 tbsp oregano
  • Pinch salt
  • Filler:
  • Chunks of cheese.
  • Cover:
  • Flour
  • Egg
  • Breadcrumbs.

Instructions:

    Step 1
  • Cook the potatoes, with salt, for 20 minutes or until soft. Let it cool before starting.
  • Step 2
  • Grind the potatoes and add the milk, grated Parmesan cheese, chives, minced bacon, oregano and salt. Mix everything up.
  • Step 3
  • With your hand, cover a piece of cheese with the base mixture, which should envelop all the filling. Pass it through flour, egg and finally breadcrumbs. Repeat this process until you finish the base.
  • Step 4
  • In a pot, put plenty of oil, in sufficient quantity to cover the balls, wait until it is very hot and very carefully submerge the croquettes. Let them fry for 5 minutes.
