Ingredients

  • 3-4 medium tomatoes
  • 1 cup cooked rice (mine was garlic and salt)
  • 1 handful of cooked corn
  • 1 can of drained tuna
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Celery salt (to season the inside of the tomatoes)
  • Olives to decorate
  • 2 avocados

Instructions:

    Step 1
  • Mix the cooked rice with the corn and the drained tuna. Season with salt and pepper and 1 tablespoon of olive oil.
  • Step 2
  • Hollow out the tomatoes and reserve the meat that we remove from it.
  • Step 3
  • Season the inside with celery salt and fill with the rice mixture.
  • Step 4
  • Peel the avocados and cut them into thin slices.
  • Step 5
  • Arrange the avocados at the base of the plates and the stuffed tomatoes on top of it.
  • Step 6
  • Place an olive on top of each tomato and show off with a rich and recycled plate.
