Recipe of Almojabanas

Vida Recetas Editorial

Almojabanas are a traditional bread of Arab origin that has become a classic in Andalusian pastry, especially in the province of Málaga. This almojabanas recipe stands out for its fluffy texture and unique flavor, thanks to the aged goat cheese from the Montes de Málaga. Made with simple ingredients like flour, eggs, oil, and yeast, these dough balls are baked until golden and then bathed in a syrup flavored with cinnamon, orange, and a splash of liqueur, giving them an irresistible sweet contrast.

They are perfect to accompany a cup of tea or coffee, and their preparation, although requiring some patience, is simple and rewarding. The dough is first cooked on the stove, similar to the churros technique, then eggs are added one by one, achieving a manageable consistency. After forming small balls, they are baked at 180°C for about 20 minutes, and while still hot, they are dipped into the syrup, which can be adjusted in sweetness to your taste.

This homemade version, with free-range eggs and cured cheese, enhances the traditional flavor. If you are looking for a sweet treat with history and personality, almojabanas are an ideal choice to surprise your guests or enjoy with family.

Directions

  1. 1

We start by putting a saucepan on the fire, with water, oil and salt. When it comes to a boil, we add the flour previously sifted with the yeast, we stir endlessly, we add the grated cheese, it will be like a ball, we remove it from the heat and add the eggs without stopping moving, we take it out of the pan and place it in a bowl.

  2. 2

When the dough loses heat, we make the balls (if they stick to our hands, we spread them with oil), place them on parchment paper in the oven tray, it will be baked for about 20 minutes in a preheated oven at 180◦ with heat up and down.

  3. 3

In the meantime, we make the syrup by heating the water with the other ingredients. When it's done, we put it in a large bowl.

  4. 4

Take the balls out of the oven and while they are still hot, we put them in the syrup where they will be until they are ready to consume. When they lose heat, they will be kept inside the syrup in the refrigerator.

  5. 5

They are eaten as is or accompanied by chocolate or fruit as I have presented them, however they are very good and even better from one day to the next.
