In a bowl, add 2 glasses of semolina, 2 glasses of flour, milk and yeast, mix everything and cover our bowl and let it rest for 15 minutes.

Then we add the oil, the two eggs and the white of the third egg, the salt, the sugar, the butter and what is left of the flour, we knead everything well then we divide the dough into 3 equal balls.

We break the first ball into 50 or 60 g balls and fill them with pastry cream, place them on a baking tray greased with butter.

We also split the second ball into small balls and form mini baguette with them.

The third ball, we roll it out and cut it with a round mold or a glass, fill it with chocolate cream and form a panadillo. (see the video)

We leave all types of Brioche until it doubles in size then we spread them with the egg yolk + a spoon of milk (mini baguette we put sesame on top of them), we bake them at 180 degrees until they turn golden brown.
