Crush the strawberries clean and without white parts, mix with the chia seeds, erythritol, a pinch of salt and soy drink (or any other vegetable drink), minus half a glass that we will reserve, and put in a saucepan to heat.

In half a glass of soy drink, dissolve the agar-agar and when the previous preparation starts to boil, remove from the heat, pour in the agar, mix and bring it back to the fire (medium), stirring constantly and cooking 3-4 more minutes.
