  • 2 boneless, skinless chicken breasts (or tofu for a vegetarian option), cut into bite-sized pieces
  • 2 tablespoons green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken or vegetable broth
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup Thai basil leaves
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon sugar
  • 2 kaffir lime leaves, torn into pieces (optional)
  • Vegetable oil for cooking
  • Cooked jasmine rice for serving

Instructions:

    Step 1
  • Heat a bit of vegetable oil in a large pan or wok over medium heat.

  • Add the green curry paste and sauté for a minute until fragrant.

  • Pour in the coconut milk and chicken or vegetable broth. Stir well.
