Ingredients

  • 1 pound boneless beef or chicken, cut into bite-sized pieces
  • 2 cans (14 ounces each) of coconut milk
  • 2 tablespoons Massaman curry paste
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2-3 potatoes, peeled and cubed
  • 1/2 cup roasted peanuts
  • 3-4 kaffir lime leaves, torn into pieces (optional)
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon tamarind paste
  • 1 tablespoon sugar
  • 1 cinnamon stick
  • 2-3 cardamom pods
  • 2-3 star anise
  • 1-2 bay leaves
  • Salt, to taste

Instructions:

    Step 1
  • Heat the vegetable oil in a large pot over medium-high heat. Add the Massaman curry paste and stir-fry for about 1-2 minutes until fragrant.
  • Step 2
  • Add the meat (beef or chicken) to the pot and cook until it's no longer pink.
  • Step 3
  • Pour in one can of coconut milk and stir until the curry paste is well combined.
  • Step 4
  • Add the thinly sliced onions and cook for a few minutes until they become translucent.
  • Step 5
  • Mix in the cubed potatoes, roasted peanuts, kaffir lime leaves (if using), fish sauce (or soy sauce), tamarind paste, and sugar.

  • Add the second can of coconut milk and enough water to cover the ingredients in the pot.
  • Step 7
  • Stir in the cinnamon stick, cardamom pods, star anise, and bay leaves.
  • Step 8
  • Reduce the heat to low, cover the pot, and let the Massaman Curry simmer for about 30-40 minutes, or until the meat is tender and the potatoes are cooked through. Stir occasionally.
  • Step 9
  • Taste and adjust the seasoning with more fish sauce (or soy sauce) and salt if needed.
