Heat the vegetable oil in a large pot over medium-high heat. Add the Massaman curry paste and stir-fry for about 1-2 minutes until fragrant.

Add the meat (beef or chicken) to the pot and cook until it's no longer pink.

Pour in one can of coconut milk and stir until the curry paste is well combined.

Add the thinly sliced onions and cook for a few minutes until they become translucent.

Mix in the cubed potatoes, roasted peanuts, kaffir lime leaves (if using), fish sauce (or soy sauce), tamarind paste, and sugar.

Add the second can of coconut milk and enough water to cover the ingredients in the pot.

Stir in the cinnamon stick, cardamom pods, star anise, and bay leaves.

Reduce the heat to low, cover the pot, and let the Massaman Curry simmer for about 30-40 minutes, or until the meat is tender and the potatoes are cooked through. Stir occasionally.

Taste and adjust the seasoning with more fish sauce (or soy sauce) and salt if needed.
