    Roast the poblano peppers on a grill or in the oven at 200°C for 20-30 minutes, or until they are soft and lightly burnt. Place the chilies in a bowl and cover with a plate to soften.

    When the chilies are soft, peel and remove the seeds. Cut the chilies into thin strips and set aside.

    In a pan, heat some oil over medium heat and sauté the onion until translucent. Add the chilies and cook for a few more minutes.

    Add the chicken stock, cream and garlic and mix well. Let it cook over medium heat for about 10 minutes or until the sauce has thickened slightly.

    Add the grated cheese and cilantro and cook for a few more minutes until the cheese has melted. Season with salt and pepper to taste.

    Serve warm with white rice and corn tortillas.
