We started with the dressing, which we will prepare long before making this recipe, for example at breakfast time, or the night before. Clean, dice the pineapple and throw it into a hot saucepan over medium heat.

Add the sugar and chillies, stir and cook for 30 minutes over medium heat

Add the oil, the lemon rind, the vinegar and the paprika. Stir, lower the heat to a minimum and let this dressing caramelize for about 30 minutes. Whisk with the mixer and reserve in a jar (See trick).

Clean the chicken wings, dry them and put them in a metal bowl. Add the baking soda and two or three tablespoons of the dressing to them.

Let the wings marinate for a couple of hours, covered with plastic wrap.

We preheat our air fryer to 200 degrees for 5 minutes. Remove the film and place the metal bowl in the fryer basket. We cook 25 minutes at 195 degrees
