Ingredients

  • 600 g of chicken breast cut into fillet.
  • 2 hot peppers cut into small pieces.
  • 1 tablespoon of grated ginger
  • 4 crushed garlic cloves.
  • 2 lemons, grate the peel.
  • 60 ml of olive oil.
  • 2 onions cut into rings.
  • 200 g of wheat flour.
  • 2 beaten eggs
  • 400 g of chopped natural peanuts.
  • 60 ml of chicken stock.
  • 2 tablespoons of sweet chili pepper

Instructions:

    Step 1
  • Place the chicken fillets in a bowl and add the chili pepper, ginger, garlic, a pinch of salt and part of the lemon zest, cover and refrigerate for approximately 2 hours.

  • In a pan, add a spoonful of oil and sauté the onion until golden brown, set aside.

  • Add the peanut to a bowl and mix it with the rest of the lemon zest.

  • Place the wheat flour in a bowl and then pass the chicken fillets through the flour, covering them one by one and then shake a little to remove the excess.

  • Then the fillets are passed through the lightly beaten egg and then through the peanut.

  • Heat the remaining oil in a pan and cook the chicken until golden brown on both sides, preventing the peanut from overcooking.

  • Remove from heat and set aside on absorbent paper.
  • Step 8
  • In the same pan, add the onion together with the broth and the sweet chili pepper, remove from the heat when it starts to boil. Serve the chicken over the onion mixture.
