You can accompany it with an avocado and tomato salad without missing the sauce, as well as some petty rolls.

Ingredients

  • 500 gr. chicken breast
  • 4 eggs
  • 1 small onion
  • 1 large carrot
  • 2 celery stalks
  • 8 large lettuce leaves
  • 2 large tomatoes
  • 1 tbsp. oil for cooking chicken (vegetable or sunflower)
  • Salt and pepper to taste
  • C/N olive oil
  • 2 lemons.

Instructions:

    Step 1
  • Put the eggs to boil. (See my #b谩sicos)
  • Step 2
  • Cut the chicken breast into cubes. In a pan, place the oil and cook the chicken for 10 or 12 minutes over medium low heat, stirring from time to time. Salt and pepper. Once ready, reserve.
  • Step 3
  • Prepare the rice so that it is ready when we finish preparing the vegetables.
  • Step 4
  • Cut the onion in a feather and deflect it in a bowl of hot water for 10 minutes. Drain and set aside.
  • Step 5
  • Peel and grate the carrot.
  • Step 6
  • Cut the celery into sticks or slices.
  • Step 7
  • Cut the lettuce as you prefer. (Personally, I like to do it on thin strings with a knife. Other people prefer to do it by hand).
  • Step 8
  • Peel the tomatoes and cut them into half slices.
  • Step 9
  • Bring all the vegetables to a large salad bowl. Incorporate the chicken. Mix. Season with olive oil, salt and lemon juice.
  • Step 10
  • Serve the salpic贸n on each diner's plate together with a little rice and 1 egg cut into slices.
