Place the butter at temperature in a bowl, the 180g of sugar and beat the ingredients with a mixer or manually.

Once we have the mixture uniform, we add the whole egg (white and egg) and the 100g of honey hopefully liquid to make it easier, in this case if your honey is hard you can soften it by heating it in a water bath.

Whisk the mixture again until everything is uniform for about 2 minutes.

To the mixture we add 375 grams of flour, 1/2 tablespoon of cinnamon, 1/2 tablespoon of powdered ginger and 1/2 tablespoon of baking soda, mix everything using a plastic spatula, stir everything until the mixture is homogeneous.

With the mixture already homogeneous, we crush the dough with our hands and wrap the dough in plastic paper (aluplast) and leave the dough wrapped in plastic in the refrigerator from one day to the next or at least 4 hours.

After the hours have passed, we take the dough out of the refrigerator and place the dough between 1 piece of baking paper, and with a rolling pin we stretch the dough.

Once stretched to a thickness of about 0.5 cm, remove the baking paper from the top and make the cuts with cookie molds, once the dough has been cut with the molds or a knife, we place the cookies on the baking tray with baking paper.

We bake the cookies in a preheated oven at about 170° C and leave them for about 15 to 20 minutes, always watching them since it depends on your oven.
